Passed bites are the hardest-working items on any catering menu: they greet guests, set the tone, and keep everyone happy while the main table is finished. The trick is choosing bites that hold well at room temperature and can be eaten in two mouthfuls without a table to lean on.
Our rule is contrast — something crisp against something creamy, something warm against something pickled. Skewers do this naturally, which is why our ember skewers with roasted peppers appear at nearly every reception we cater.
Portion planning matters too. For a one-hour welcome reception, plan six to eight pieces per guest; for a full evening built on stations, double it. Your caterer should walk you through the math before you sign anything.
